These pancakes are a real treat. Something a little different than a sprinkle of sugar and squeeze of a lemon.

We've whipped up some delicious chocolate and banana pancakes, topped with coconut yogurt and lashings of fruit. YUM. Let us know how you get on...

What you'll need

  • 280g of plain flour (whole wheat is best)
  • 2 teaspoons of baking powder
  • 1 1/2 teaspoons of bicarbonate of soda
  • 1/2 a teaspoon of salt
  • 1 tablespoon of honey
  • 2 large eggs, lightly beaten
  • 400ml of milk
  • 2 tablespoons of unsalted butter, melted
  • A little extra butter for frying
  • 2 ripe bananas, mashed
  • 1 tablespoon cocoa powder
  • Natural coconut yoghurt
  • Superfood fruits... mangos, strawberrys, blueberries
  • Seeds and nuts, you choose your favourites

Step one

In a large bowl, mix together the flour, baking powder, bicarbonate of soda, salt and cocoa powder.

Step two

Make a well in the centre of the flour mixture and pour in the honey, eggs, milk and your melted butter. Whisk together thoroughly, but don't over mix.

Step three

Mash your bananas and gently fold them into the batter with a spatula.

Step four

Heat a griddle or saute pan over medium-high heat. Swirl enough butter around the pan until it's well coated. Add the pancake batter using a soup ladle.

Step five

When the pancakes begin to bubble, and the bubbles are dry rather than full of liquid, flip them over to cook the other side. Repeat until your mixture is all gone.

Stack up your pancakes with the coconut yogurt (we recommend lots of it!). Add your chopped fruit and nuts and drizzle with a little extra honey if you have a sweet tooth or need a little extra slow release energy.
