Nothing really beats breakfast in bed, does it? It is a fact (or just our very strong opinion) that eggs are the best breakfast in bed ingredient. So let us introduce you to our top seven recipes bound to please your rumbling Sunday morning tummy… starring the incredible, edible egg.

Dippy Eggs

What other breakfast brings back so many childhood memories? I was obsessed with dippy eggs when I was younger and used to smother my soldiers in jam - Yuk! I don’t think there is anything else that pleases a crowd so easily. Whether you top your toast with butter, marmite or if you fancy making your eggs fancy then try this asparagus French toast soldiers. For the perfect runny yolk boil for 5 minutes… that’s what Jamie Oliver recommends anyway.

Smoked Salmon & Scrambled Eggs

This recipe is often forgotten about year round until it gets to the Christmas food shopping and suddenly everyone goes mad for it. Give this yummy breakfast some love and whisk up some scrambled eggs this weekend. I tried to find an extra delicious recipe to share with you, but they are all pretty similar, heat your eggs in a pan of hot butter and stir continually until cooked. Try it on a bagel rather than toast for an extra treat.

Eggy Bread / French Toast

My mouth waters even thinking about eggy bread (or is it French toast?). The process of making this usually results in the kitchen smoke alarm going off and egg mixture all across the worktops… but it is always worth it! This recipe from A Beautiful Mess gives eggy bread a makeover by adding your favourite cereal into the mix as well, it sound utterly delicious.

Egg Baskets

Love eggs? Love cheese? Then this is the perfect breakfast for you, and as far as recipes come it doesn’t get much easier. Simply cut a ‘lid’ off your crusty roll, hollow out and add a little cheese into the bottom (most recipes suggest gruyere but anything will work). Crack your egg, add a pinch of salt, pepper and whatever herbs your heart desires. A sprinkle more cheese and pop your bread lid back on. Wrap it all up in tin foil and pop it in the oven for 25 minutes, et voilà the perfect egg bread basket.

Baked Eggs – Dip & Share

I only recently discovered this recipe, which is outstandingly delicious. I love it because it tastes so good but even better is that it looks very impressive (especially if you have weekend guests) and is actually very simple to make. You can use anything you have left in the cupboard (I would recommend chorizo, feta, mushrooms or bacon!) as well as these key ingredients:

  • 1 tin of chopped tomatoes
  • Handful of cherry tomatoes
  • Handful of chopped peppers
  • Pinch of salt
  • 1 big blob of honey
  • 2 eggs
  • Lots & lots of bread

Pop everything but the eggs into a pan and let it all simmer for 15 minutes until it’s bubbling away. Crack your eggs in, let them bake and then serve with a generous helping of bread.

A poached egg on its own isn’t that astonishing if we’re being honest. But add a few other simple ingredients and you change your everyday poached egg on toast into a delicious breakfast in bed treat.
